Regarding the shape of the earth; From what you've said my guess is that the map we know is just a small part of a world that's bigger than we've been told. Part of why I think this is because I can't imagine the giant creatures you spoke of being able to sustain themselves on a planet that's only as big as what most people currently believe. It would also be a lot easier to have break-away civilizations if people are able to go "off the map".
