i believe eggs were recently found to be produced throughout a woman's life, it's just that the number of viable ones changes depending on a bunch of different factors. those egg tests women get merely track a hormone associated with egg viability, and that hormone can drastically change over a woman's lifetime. it's not uncommon for women who were abused as children to develop lots of reproductive issues (that endo shit where your uterus grows outside of your cunt or whatever, etc) that can end up making them infertile at 25.
