Because anyone who has done heavily commission based work or started their own business/self-employment will know how hard it is to have infrequent income.

Getting a wage is a simpler less stressful life because it comes in with some certainty and regularity. You dont have to wait another fortnight or a month, or two months for that new deal to go through before getting anything, that's your employers worry and not yours.
