IIRC there's also cooking methods, poor cooking of meats in Africa (bush meat) that is contaminated with Ebola. I would assume that not cooking a human correctly if said person was carrying Ebola or something would also be a risk factor, if you like your meat rare/bloody.
Avoid brain matter, bone marrow and spine/spinal fluid. Although I don't endorse eating humans, I'd assume it's a rather boring taste.

To add, the reason why Kuru was so prevalent within Papua New Guinea was because widows of hunters would be forced as a custom to consume the entire body, every single part, including the bone, which was grounded and then turned into a paste. Kuru killed mainly women and children, because they were the ones that had to consume the dead hunters. Closed nit tribal things, but Prion disease is a risk.
