I don't think anyone has access to that data, some jets have less than 100hrs on their air frames while others may have 500+ just due to when they're built. Not exactly sure what the average would be.

It's complicated.
Stealth planes aren't completely invisible to radar, it's just that the detection/identification range is more limited and it'll be more difficult to get a good lock on it. It can help if there are multiple types of radars working together too.
The F-35 operators know all of this and they try to plan their missions in such a way that it probably won't be detected, or that they won't be able to act on it once it is detected.
The US has a new suite of "smart" missiles now that complement stealth planes and they should be able to overwhelm any air defense systems pretty easily.

If they had stuck with Ada these problems wouldn't be happening or at least a lot rarer. They switched to C/++ mostly because they couldn't find new developers that knew Ada. C/++ has tons of undefined behavior which is one of the reasons for these issues.

Correct. The US wants to keep it's ace card for itself. The F35 is less stealthy and tries to be everything at once, which is a bad way to tackle a problem. The modern russian jets are less stealthy than both F22 and F35, but more maneuverable due to 3d vectoring etc. Modern air combat is mainly done via missles nowadays but until a clash between high tech nations happens nobody can say for sure if dogfighting is really dead. Jamming might be a factor.

I work cleaning up other software engineer's mistakes. The problem from my perspective is old aerospace engineers who know nothing about software or hardware making decisions due to seniority. Then the senior software engineers who are also old as fuck don't know C/++ well enough to not screw everything.

They have a bunch of them. Some are decoys that can mimic other planes. Some are designed to track and destroy enemy radars. Others are the main attackers. I don't know the details, I know they tested some of them during the Syria attacks though.
And I think they're planning on selling them (or are already selling them). This is a huge problem with Russia, why is trying to sell their defense systems. Syria acted as a sort of demonstration site for both sides and sales are on the line. Pretty fucked up when you think about it.

The avionics is older. But it still beats the F-35 for air superiority. And it is stealthier.
It might have been better if they had stuck with it and modernized it instead. The main selling point of the F-35 was that it was supposed to be cheaper. But they fucked that one up bigly. Also the F-35 is a joint project and more exportable, so it was supposed to rake in money. The F-22 has too many secrets to export supposedly.

Build numbers are largely a result of differing approaches to recruitment. The sov's design, build and test a huge number of weapon systems and ensure they can be put into serial production if required. The yanks order several million to keep the corporate welfare going, never use most of what they order, and shitload gets scrapped 20 years later having never been used.
