As a former AnCap, I would say it would look like a violent mess where society organised into three main demographics. The first would consist of people who happily follow the NAP and enjoy small, completely unregulated markets. The second would be people who like the first but don't care to follow the NAP and would violently defend the first against the third. The third would be people who don't like anything AnCap and would want to impose a state on everyone or live under a different form of anarchy. That's pretty much the best it could be.
Another possibility would simply be a regular nation with a state but the state is technically a corporation and it cares more about money than say power or politics like proper states.

One of the main points of capitalism is valuing what is wanted over what is best. There will be people who want big daddy government telling them how to live and there can be nothing stopping them getting what they want. Moreover, the services such a "state" will provide is security, real or perceived, something to live for other than the self, collective identity and plenty more. There are countless people willing not only to pay for such things but to sacrifice their lives for it. Just because we would be happy living without a government breathing down our necks doesn't mean others would.

I favor heavily restricting immigration by people from non-European backgrounds, but my ideal state is basically East Germany c. 1980.

There's a lot of research suggesting that a robust, healthy, and non-abused welfare state can only be sustained in the environment of an ethnostate, as they lead to very high social capital and interpersonal trust. Economic leftism and social conservatism are not contradictory in any way.
