This. Judaism today has almost nothing in common with what was practiced in Roman times, which had almost nothing in common with what was practiced in 'old testament' times. They've interpreted and reinterpreted their scriptures so many times that you can find a respected Jewish scholar arguing just about any side of any position. It's the least coherent of the monotheistic religions, and that's saying something.

Also there are escarpments that were dug out by trillions of gallons of fast moving water which created sharp edged plateaus due to the sheer volume of water and speed it was traveling.
