It's because of tolerance. Your blood chemistry and mind become to alcohol (CNS depression) and over time you need more and more of it to get the same effect on your CNS. This is why alcoholics can drink quantities that would kill sober people. They eventually develope physical dependence on alcohol. If they stop suddenly the change in their blood chemistry could kill them. During you period of sobriety your blood chemistry returned to a natural state, when you reintroduced alcohol, your body and CNS was not adapted to it, which is why it made you feel shitty.
