Like, I run a practice race, and I average a 5 minute mile, but on race day, I get halfway through and I'm at a 5:30 mile pace. Do I assume that I'll be 50/50 chance of being under a 5:15 mile pace? No. Because there's something different about the actual race that I didn't account for in my model.
