In Sweden, it's historically been a faux pas to bring your own food to school. From ~1970 to 2010 or so, virtually every single child would eat school in the Swedish cafeterias, and there are plenty of regulations, rules and recommendations from authorities (livsmedelsverket, skolverket etc) which would ensure that children would get a relatively healthy, balanced diet. For example, milk, bread and salad is always available in addition to the hot food, and no soft drinks or other sugary beverages are available . It's not even remotely comparable to the cafeterias that you have in the US where barely anyone eats, where they serve garbage food for $1 or stamps.

It's been over a decade since I did my time and even longer since I was in school so I don't remember it that well. True, army food is better since you are way more physical than in school but it's not really that far off. But if you get rid of conscription you have no reason to be feeding the kids at school properly since they aren't going to be serving anyway.

I think you're misinterpreting what's going on in Sweden in this particular situation. The reason we had school food in the first place was as an equalizing factor, so that even poor children wouldn't go hungry in school. Vegetarian food isn't going to result in people being vegeterians, it's going to result in us abandoning the system of school food as an equalizing factor. We're going to become like the US, where the rich kids eat at restaurants or have their parents prepare food for them, while the poor kids are forced to eat the garbage served in the cafeterias. we have sodexo in america as well. i used to work for a hospital system in Michigan, and they had to stop doing business with Sodexo because of their shady practices. It created such a risk to keep them contracted. I still remember the glare of the head vegan bitch who once made a vegan cake for someone birthday and no one fucking touched it because it tasted like cardboard and packaging foam.

The solution is to make better vegetarian meals. Vegetarianism is not only completely sustainable nutritionally, but cheaper when compared directly to meat equivalents. Culinarily, you dont need meat to make a decent meal, but its a nice crutch because it takes very little skill to cook simple meats that taste great.

"Rice and beans" doesnt make for a complete meal, but is a good base for a stir fry, stew, or soup. Hell, you can even make black bean burgers that taste great, but those would be more expensive for a cafeteria to make
