The problem with gold or any other commodity is that its scarcity or abundance does not correlate with the total goods and services that need pricing. So it artificially goes up and down disrupting all the prices for everything that everybody is actually trading. The fiat currency increases with the total economy since it is supplied via loans that are approved according to the demands of businessmen who apply for them as their businesses grow or projects develop. More economy, more money, and therefore prices remain stable, and the efficiency of the currency regime remains optimal.
If one were to demand that money be backed by some commodity, gold or silver would be the worst one since only limited people have access to it. The fair and honest commodity to price money at is "man-hours" since every person then can generate his own, it increases with the population, and nobody can corner the market.
