Mail-in ballots and provisional ballots
Mail-in ballots literally can't teleport and many allow them as late as Nov. 6 postmark. They physically have to get from Point A to Point B. Provisional ballots usually sit around until voters come back to certify their identities. You know all those new voter ID laws? Well, we have far more provisional ballots in those states now and people want their votes to count, so they're coming in to prove they're the ones who voted. Most states don't certify votes until late November/early December. Most people don't notice however because races generally aren't so close, aren't this contested, and aren't national news for this long.
