Culture is something that a whole group of people have in common, whether it be art, language, music, dance, food, dialect, philosophies, etc.

Totally, but I would say your cooking is a lot different than 17th century peasant meat.
I got some traditionally cured ham from a German specialty firm last month. It was an 18th century recipe.
Any form of heat applied made it too salty to eat, ended up using it as extremely thin cuts to top breakfast plates uncooked. Even pre refrigeration meat for travel in the US was packed in salt to extend its life.
Then you have to remember that access to this for your average peasant was very limited, keeping their salt intake low.

American blacks are dying of "Kings Diseases" now, because they are eating high fat, high salt, high sugar (muh spices) food 3 times a day. You can't eat meat 3 times a day cured with high fat, then expect to live long or be fit.

So it's all a balancing act, and modern cuisine is shifting towards lighter spices and fresher ingredients.

Good luck on the recipe book. My wife trained in Paris for a year and has written two. One was modernised classic French that didn't sell well, the other was novel approaches to Dairy Free, which sold like crazy. If you want to sell, I would suggest attacking a niche

Like I already said, no dish is 100% original. Mexicans also eat chitlins except they use cow rather than pig. It's hard to have a 100% completely new, never before eaten dish unless you start eating an animal or plant that humans historically just never wanted to or thought to eat.
