No, they're adapted to survive in an extreme environment rather than take advantage of plenty. Critters that are adapted to more calorie dense environments are adapted to USE those calories rather than conserve them. They'll be wiped out.

You can't 'fix' the desert in Australia because the dirt is just silica oxides with no minerals. Otherwise you have a good point. Only edgeland Austalia is worth more than what is under it.

Cattle actually consumes more water and their hoofs ripping up the soil literally leads to desertification. The real problem is invasive species and the over use of water.
