Doesn't change the information they've already got on you. Google buys your information from other parties, so you don't even have to use their service for them to have an advertisement portfolio of your interests. And no, you can't get rid of that. You can tell them to stop tailoring ads to you based on that information, you can tell them to delete your account information, but you can't make them delete the information they bought from a third party. Ever.

I just wouldn't recommend using google, they give you the illusion of control, but you never know how much they really have. They can buy your download history, traffic, location and more from third parties, and never claim it on your Google account. I did a lot of testing with dummy accounts in 2016 before they required phone verification for new google accounts.
