Im not well versed in philosophy but from what I've heard from him it seems that he parrots Nietzsche and Hung about resentment.
People ear him because being the smartass he is, he gives emphasis on calling out the flaws of the far left over the flaws of the far right (which he also does in the classroom but more discretely). Hes absolutely right about both though and condemns them.
But hes also fully aware that much of his audience are disaffected young men who cant date and he takes advantage of said resentment and uses it against the far left which also encompasses feminism in its extreme form making it the perfect scapegoat and therefore increasing his patreon revenue.

You're right, Peterson tries to talk on everything, almost like he believes he has some sort of super power of deep dissection of every layer, but just ends up giving long winded explanations to get some simple points across. He knows his audience, it also gets him money, and that secures his confidence to blurt on everything. He is intelligent in my opinion, but to speak on everything with some kind of high stature is just madness, he's okay when he stays in his own lane or what he's specialised in, as he gives a lot of thought on things, but he's no genius as people make him out to be.

Peterson is a teacher and a scientist. His language is very VERY precise. I met a few people who were angry at him because they could not follow his line of arguments.

The whole argument is based on Peterson's (not meritless nor original) claim that stories that stand the test of time have a metaphorical truth that's endlessly deep to be analysed.
For example, some of shakespeare's work was based on pre-existing stories, like Romeo and Julliet being based on Pyramus and Thisbe, where both thought the other had been eaten by a lion attack.
So here we can trace back the story to a point closer to its origin.
Peterson's Pinocchio analysis is based solely on the disney version and falls apart when compared to the italian children's fairy tale. And there are no previous works that this story is based or derived from, it was an original work.
In contrast, for frozen the changes are obvious and blatant enough that it was made with LGBTQ in mind, so he knew to attack that. For Pinocchio it seems like it may be the original story, but it's nothing like it, besides the growing nose and being turned into a donkey.
