If you actually intend to do something about it, you should tell her parents. Straight up, tell them everything. Show that you had no I'll will and that you don't want her to do that anymore. She can put herself in serious danger or turn out to be some crazy bitch who lies and blames somebody for assaulting her when nothing happened. Fucking cover your ass bro. I almost think the conversations of you confirming who she is, and asking her age and level of education, should be sufficient to prove you were making sure she was an adult. You can only be held reliable for so much when she is lying, especially since the difference in appearance is not necessarily enough to tell apart a 16 year old, from an actual legal age girl. You didn't actually do anything, and you deleted the picture, so it should be fine.
Still, she sounds very immature. She has a boyfriend at 16, and is already looking to cheat, she lies about her age instead of being upfront about it, and doesn't understand how this could be have had serious consequences for you. I'd really tell her parents about this, if only because she needs to understand that these kinds of things can have very serious consequences, my just for her, but for you as well.
This is why skipping classes is a bad thing. Being good at classes doesn't want you have the maturity that society requires. They need to grow up before being thrown into an environment with older class mates, who has had more time to develop.

I don't know about the rules of America, but in most countries I have heard of, there is never an issue if you were lied to, and had no reasonable doubt about her age.
So a 10 year old would not fly, no matter how much she told you she was 18+, but a 16 year old who goes to an age appropriate level of education, and claims to be 19, likely wont be a problem. Several cases have come up with marriages or other types of sexual arrangements with girls below the legal age at the time of the arrangements start, where the trial wasn't held until it was far too late. in very rare instances is the older part ever sentenced, despite having had sex. You can only expect so much from people, and expecting people to perfectly tell apart a 16 year old and an 18 year old, is not only unreasonable, but when it is coupled with lies, the guilt most often falls on the younger party (but usually no more than a slap on the wrist) for identity fraud.
