Indirect heat for any and all birds. I put an aluminum pan of water UNDER the chickens on the base of the grill, and keep the coals off to the side. This heats the grill, but does not burn the chicken. The steam from the water helps keep the skin moist, and not burned. It is very easy to ruin chicken. Low fat content of the meat means it will dry out fast. ALWAYS leave the skin on. I hate the skin, but I leave it on. By the time 3-4 hours is up, it is generally inedible, but the meat underneath is tender and juicy.
