I hear it is largely for lonely people who want to feel like they're having dinner with another person. I'm not sure I believe that completely. I would up watching a few because they were touring big cities and trying out different foods there, and I like to travel. I stumbled across a few interesting ones filmed in Japan. They have amazing 7-11s, and a pretty elaborate vending machine business. Their machines vend many different kinds of high quality hot foods for decent prices. It makes me a little sad. I look at the progress Japan has made with vending and wonder if that's where America could be right now if it weren't for "diversity" weighing us all down and holding us back. The most you can hope for from a food vending machine here is a burrito and a microwave oven next to the machine.
