Welding fumes are very toxic, plus you'll need to do a lot of angle grinding which puts lots of tiny metal particles in the air which you breath in and they collect on the surface of your eyes and likely can even enter through your pores.
Some correctly setup shops will have a fume extractor which goes a long way but in general trade jobs are not health oriented.
Most tradies do damage to their bodies every day and no one seems to care - not them, nor their employers.
I think most police like it actually because it keeps these criminals off the streets.

Depends entirely on what kind of welding you're doing (Flux core is lethal, MIG is just inert gas that's heavier than air and can't kill you unless you gulp it down on purpose), and you can wear a respirator anyway. Just don't wear a half-face, they're basically not helpful.
