Rory MacDonald is a notoriously good example this, an absolute killer, and he came from no previous martial arts background before joining an MMA gym. The thing is any good MMA gym will have dedicated grappling and striking coaches, so it doesnt matter if you dont have previous experience in a particular martial art, you are going to get a high level grappler teach you how to grapple and a high level striker teaching you how to strike, and a bunch of jack of all trades guys with different takes on how to marry those techniques.
