If you want to make it expensive for her, then file a report with the dean of your university and the student association. Tell them that she makes you feel unsafe, and get it on the record that she is possibly a dangerous person who is mentally unstable. That will fuck her shit right up. Go beyond your professor. Go to whatever department you file complaints about students to, and tell them that you've been having panic attacks and can't sleep because of her behavior. They will have to document it, and then this will be on record any time she tries to fuck over another student.

Then stay and keep your laptop or phone recording everything. Don't do anything outright provocative, but just small things here and there. Just wait. Eventually she'll snap. It'll be recorded, and you can bring it to the dean. See what you get from there. But I'm not too good with mischief. I tend to keep to myself and simply go about my business lest I'm directly confronted.
