There's also relationships and trust that need to be maintained. If a $200 graphics card suddenly became $1200 people wouldn't buy it because they'd feel insulted, cheated, and taken advantage of. Even if they lowered the price back down to $200 it's all over for that company who has now alienated their fan base.
Companies know they'd be better off with a minor price increase or keeping prices at the same inflation rate in order to encourage more purchases and maintain the trust of the consumer base.
