Exercising and have a balanced diet is the best thing for it. It is a little harder for women to lose weight so it'll take time. If she's willing, she can always schedule an appointment with her primary care and discuss a plan to help her lose weight and keep it off. Don't beat yourself up if you're struggling!

I've heard strength training is more effiecient for weight loss. When you train strength its by tearing and making them stronger when they grow back. That regrowing process apparently burns more calories than other exercise routines. Anyway, support her since shes actually trying to lose weight which is really hard.

Do you mind if I ask if you're also working out? My boyfriend and I usually work out together and it helps us commit to it if we both go. Not saying that's an issue for her if she's been doing it for awhile, but it could be a very supportive step and says you're in it together. If not you can always say you're proud of her after a hard workout. If she has weekly or monthly goals and meets them, spoil her, go out for a movie or date. If she doesn't meet them, tell her it's ok and you can see she's doing her best! Little things like that are very appreciative and it'll boost her confidence.

She needs to eat regularly, never skip breakfast. And of course, staying hydrated is important.
I didn't mean for it to come off this way, but I do think it's important to encourage your partner if they want to do something. I know if my partner had a goal, I'd be as supportive as I can be and recognize the efforts that go into it. It's hard to make big changes in your life and stick with them, I think anyone should be rewarded for making those changes and bettering themselves.

Your body needs small portions of food, but more often (4-5 per day). This will prevent snacking and loosing energy in the middle of the day. Also if you're not eating not frequently enough, body will store everything as a reserve of energy.

Calories in must be less than calories out. Eat less, move more, circle whatever applies. That's the only universal principle for weight loss. Everything else is a personal preference or a scam.
For example, I usually eat one or two big meals a day and have an easy time maintaining a healthy weight. Someone else might have an easier time eating several small meals each day, while his friend is doing best using intermittent fasting. When I was changing my diet, I started with one cheat day a week, which became a cheat meal, which became "oh, I missed cheat day without even thinking about it, that's interesting." Other people might do better going cold turkey all at once. It's about sustainability and personalized plans. Get it?

weight loss is simple physics: calories in must be less than calories out. hitting the gym is nice, but constant effort, throughout the day, is better. portion control and healthy meal planning is the fucking golden star. patience and persistence, always.
as for you, try not to offer any "help" unless it is specifically asked for. girls tend to look at their friends and lovers as a comfort zone. you are supposed to make her feel good. if she hates her body, you pointing out when she is eating a tub of ice cream might feel more like a betrayal. love her, even the pudgy bits, encourage her, and join in with her. if she is punishing herself with salads, eat one with her. if you can't go to the gym with her, offer to go walking or running with her.

I know people like to suggest crash diets and punishing exercise regiments but really losing weight and being healthy is a life change that you should WANT to do. There wouldn't be any point to doing it if you're exercising and dieting but still eating the shit that's making you fat or drinking because you're miserable doing it.
I personally went from having a body just like your gfs at 220lbs to 140lbs just by cutting out fats, sweets, oils and cycling around town twice a week. Cycling really became a fun, personal challenge for me as I would find new hills or roads I wanted to get to and I told myself to get myself to the physical condition to do it.
I also added natural coffee and teas with honey instead of sugar and small bits of flavoring to not only reduce the acidity in my body (which made it hard to exercise) but to also stave off random urges to snack and eat. I think it's a good place for your gf to start to at least get rid of water weight and boost her energy for activity.
Proper fasting followed by a healthy diet and exercise.
