I haven't eaten out in years but I remember the local popeyes used to be the best fried chicken I've ever had that I didn't make myself.

What I do though, is buy thigh meat, marinate it in buttermilk with garlic, ginger, chili powder, cumin, turmeric, and coriander, then coat it in a flour, chili powder, and breadcrumb mix and fry it once at 325 F and again at 350 F.

The only downside is I now only eat fried chicken when it's cold outside.

Because having them removed compromises the taste of the meat. Bones regulate the cooking temperature and add flavor, they're supposed to be there. Removing the bones is the first sign the meal is made for convenience, not taste.

The chicken thigh is the best cut of chicken meat. Breast is for white people, legs are for niggers.
