Anyone with a knowledge of how buildings are now should not be surprised. It is very difficult and expensive to get large timber. It also creates the possibility for the exact same thing to happen.
Using steel and concrete for the structural members in the roof will prevent another fire from consuming the actual structural members like they did the timbers. They will not degrade over time, they can be given a fire-retardant coating, and possibly even a sprinkler system installed into the attic.
If the roofing material looks faithful to the original then there will be little difference in appearance.

Notre Dame de Paris has been rebuilt before (as have other cathedrals) and will be rebuilt again. To look as it did prior to the fire. Not just because it's a religious institution and people expect that style to be maintained, but because it's one of France's biggest draws for tourism and no one will care to see some monstrosity that spits on what was lost. Changes and compromises will be made given the modern materials, but those will be made structurally where most people won't notice them. Preservation of a landmark is a lot different then a deliberate attempt to "modernize" it.
