There's a lot of things christians believe and historically have believed that aren't in the bible. Christian tradition is absolutely littered with remnants of pagan traditions.

Consider that for much of Christian history, a majority of believers couldn't actually read the bible, or even understand when priests held sermon.

It has to do with the architects that build it and the superstitions of the time. Everyday people didn't go to school and were kept in line by fear. It is true that statues and idols have played a part in histories ancient religions, but much like the intellectuals of today, the more enlightened tend to move towards the occult or be more open to thinking outside of the religious box.

The gargoyle isn't an idol but, like many statues, an artistic/architectural way of expressing beliefs. They were meant to be representations of defense and protection, and what ever structure the builders placed them on would be protected from evil spirits. It is like if they would come alive in the spirit world and do battle for the structure and not let any evil in.

Actually, that's not what a gargoyle is. A gargoyle is a water spout, which may or may not be shaped like some sort of beast. It's just that in recent years, the meaning of the word has shifted. Using gargoyle in that sense in a modern context isn't wrong, but if you're discussing medieval architecture, you should use appropriate terms to avoid confusion.

More generally, fantastical decorations of that nature are called Grotesques.
