AI is a stepping stone away from organic life. It can still change itself and adapt without 'dying', and it subsequently adapts faster to new environments - and is able to survive much more lethal environments - than organic life manages. It's also more efficient than organic life - metal doesn't require the kind of maintenance that squishy flesh does, energy is easier to acquire and use and can be used without expensive and hot chemical reactions.

The downside is that making the robotic systems in the first place is tougher than making an organic system, which is why evolution has gone organic -> robotic. Organics are the stepping stone to robotic life.

It's very likely that rather than organic life spreading through the stars, it will be 'artificial' life.
