Yeah they did, which actually brings alot up for concern because theres no reason they should have been taken down.

I was actually surprised that the fire was deemed accidental as I was SURE without even talking to anyone that the French workers would not work at 7pm, not at a restoration anyway. And then the owner of the company confirmed that.

its possible they were turned off. it's very common to cover and disable fire alarms during construction because the dust ruins detectors as well as setting them off as false alarms.
