If a girl feels the need to mention her boyfriend in the very first conversation you have with her, it's likely you're coming off in a way that makes them do that. Also a decent percentage are probably lying for the same reason (especially if you're chatting them up at a bar). Just play it a little bit more cool. Care less, talk more about things than asking them questions about themselves.

Do what I do. Tell them that it is odd to mention that out of nowhere. Ask them why they think it's relevant. Look them in the eyes and make it clear that if you were actually interested in them in that way you would have explicitly said so.
Drag people into the conversation and watch her squirm, have fun. Most women who do this approach me, and I talk with them as I would a man. So, I feel justified in doing this.
Women do this in THAT situation for two reasons. To make it seem as if you're flirting with them, and as an admission that they can't get with you despite starting the attempt.
They do this to make themselves feel better while deluding themselves. Do them a favor and stop their delusions.
