Untouchables are a group of castes in India which historically served as street sweepers, latrine cleaners and did all the menial jobs. The caste system links ancestry with your occupation. So the highest castes served as priests, philosophers, advisors, mathematicians and so on, while the lowest castes did lesser jobs.

Untouchables were not allowed to enter temples, schools or indulge in any places where the higher castes were present. Nor were we allowed to learn how to read and write. And especially Sanskrit. If we didn’t follow those customs, then we would face punishment by the royal guards under the supervision of a Brahmin.

Eventually the Muslims invaded India and the upper castes entered in tussles with the Muslims, while the untouchables either converted to Islam or found their own communities. But that tag stuck. And when the British came, once again the Brahmins had subverted the British Empire and rose above.

I can't speak for the rest of India, hopefully Dalitanon can attest to those. In Kashmir, both Muslims and Hindus tend retain their Krams, which signify Gotra and/or denomination of caste, even within Brahmins. Some that come to mind are Raina, Kitchloo, Chowdry (this is one that's present in virtually all northern ethnic groups, as it refers to the leader of a tribe), Bhat, Dar, etc. Caste is defined by amount of Indo-Aryan vs. other admixture in mixed-race India. The caste system was never very prominent in Kashmir, as everybody is heavily Indo-Aryan. Basically ethnic Kashmiris are almost entirely Saraswat Brahmins or quasi-Kshatriyas. The Watals, Gojras, etc. act as the lower castes, including the equivalent of the untouchables, although they're treated much better.
