The issue is that there's a genuine sizeable opposition towards these people who are just trying to live a normal life.
I live in the UK and homophobia isn't exactly uncommon, I feel like everyone knows someone who's homophobic whether it be a relative or a group of guys down the pub or a neighbour or a friend or whatever. For the most part, younger people tend to see it as pretty normal but I'd imagine it'd be very annoying as a gay couple to walk down the street and get weird looks/comments/"jokes" and all that shit, even if they're not getting hung from trees.
The way even slight homophobes act is pretty fucking weird when you think about it. Like they just want gay people to "keep themselves to themselves" but by that they mean they can't hold hands in public, they can't kiss in public, etc which are just normal things that couples do. People act like teaching younger kids about the existence of gay people in school is the same thing is teaching younger kids about dirty anal sex in school, like being gay is overtly and purely sexual even though I definitely had a concept of love/romance/marriage when I was a little kid before I knew a thing about sex.
I think gay people in first world countries are mostly just annoyed that they can't live their lives normally. Every gay person I know has received some form of homophobia whether its a comment or physical or rejection by certain family members/friends. They just want their gayness to not be a big deal because they're normal people otherwise.

Gay people should be allowed to do normal things that people in relationships do in public without getting people telling them to "keep that shit to themselves". Also, like you said, the bakery thing happened once, so why think about it? There doesn't seem to be a trend so why use that one instance to group all gay people together? Everyone's experience with different groups is gonna be different and you shouldn't use that to define what that entire group is like.
