They are used for different things. Because we had enough already when combined with the F-15 (USAF) and, at that time, the F-14 (USN). The military wanted to get away from large numbers of air superiority and intercepter aircraft for multiroles like the F-15E, F/A-18E/F, and F-35 because air superiority and intercepter aircraft are incredibly expensive for how rarely you end up using them.

As to why the tooling was then destroyed the worry was espionage. Those aircraft are full of highly classified technology that you do not want ending up in chinkland, Russia, or anywhere else so the usual thing to do when you're done with production is to make a decision as the whether you want to keep the tooling based on your future needs and what else you have coming down the pipeline. In the F-22s case it was decides the tooling was not worth keeping around due to those reasons. They did the same thing with the F-14 tooling too btw, so it's not a super rare practice.

OH. Hmm suppose that makes sense then. Be kinda SOL if things went pear shaped and they wanted to build more pronto, but I suppose they've replaced them with a new design.

The tooling for the F-15 is still around, and the F/A-18E/F, F-16 and F-35 can all serve in an air superiority role if need be, just need to change out the armament a bit. But yes they undoubtedly have other, currently classified, designs in the pipeline as well if things were to go tits up.

You also have to remember how good the F-15 is. If the F-22 didn't exist the F-15 would still be the objectively best air superiority fighter in the air right now so, again, if shit went tits up they would likely crank out a bunch of F-15s, F-35s, and F/A-18E/Fs to compensate.
