Last I checked up on you guys, it was pretty much only lever-actions and some .38 revolvers available for law-abiding civilians.

Rifles/shotguns are easier to shoot because you have more points of contact. Start with something low-recoil (.22 LR is the go-to for this) and work your way up.
Make sure you know which is your dominant eye before going. ~30% of the population is left-eye dominant, so there are a lot of cross-dominant folks out there.

How are import laws?
That is what's known as a "cap & ball". You pour your measured powder down the bore, put a ball on a wad and shove it tightly against the powder, put a percussion cap on the "nipple" (Yes, that's what it's called) and then you're ready to fire. It was the last common form of muzzle loader.

Very quickly, too. You just need to lift the muzzle, move the block to the side, cock the hammer and fire. If you were firing from prone, you'd just roll onto your back and point the muzzle upwards. That's a LOT easier than reloading a musket and a lot less dangerous to boot.

Remington was purchased in 2007 and quality immediately went to shit. For a pre-2007, you'll have to get it second hand. The Equipment Exchange part of CGN is where most people buy/sell used guns and parts, but expect Boomers to go full "I KNOW WHAT I GOT!".
As for pumps, Mossberg is the go-to these days, unless you're fine buying Norinco or Turkshit. Otherwise, there are guns like the Ithaca 37, Browning BPS, etc.
