I read years ago that they tested store bought veggies versus home grown, and the home grown ones won all the blind taste tests and had 3x the vitamins and minerals. Anybody who has had home grown produce can attest to how much better it is.

In homegrown food it would take 4-5x longer to grow what mass produced food does. Homegrown has higher lignin and vitamins because it takes longer to grow.
Mass produced has less lignin and higher water content.
If you dehydrated them and pyrolized them on a mass per mass basis they would be identical. Homegrown has higher fiber content and higher vitamins. Dehydrated vegatibles from mass produced sources has less dietary fiber but the exact same vitamin content as home grown products because you're eliminating the bloating phase (because you're not waiting for hydrophillic cellulose to convert to hydrophobic lignin which is what is actually the change in mass)

it's probably attainable to have full self-sufficiency if you had some startup capital and skills, but it wouldn't be a leisurely lifestyle, you'd be working non-stop like 16-18 hours per day every day, 365 days a year most likely, if you wanted to maintain adequate food, shelter, clothing, warmth, clean water, avoidence of pests/rodents, and probably a million other things I'm forgetting.
That's why farmers would have like 10+ kids, they could put the kids to work on the family farm, divide the work while sharing resources/shelter, etc. in a way it's sort of like a "small community" so in that sense I suppose it's not individual self-sufficiency.
I planted some potatoes in grow bag recently and have the potatoes sitting on a couple inches of soil and then soil covering the potatoes just enough and wondering wither or not i can completely fill up the grow bag and leave them be or should I add more soil as the potatoe stalk grows.

It's illegal to be self-sufficient in the US. You have to pay property tax. Hell in some states you are required by law to be hooked up to the electrical/water grid. There is no escape.
