It's a complicated story. In short: yes, they really were persecuted throughout large periods of history.
But there's a few things to understand, in that. First: "Jews" means a whole bunch different things.
There are the Canaanites during the bronze age collapse. And yes: some of them were enslaved by Egyptians. Then the Israelites arose as a national identity in one of those Canaanites tribes and said "polytheism isn't cutting it. Our tribes' gods are superior, and also they are the same thing, and also they're the only real one so haha, you're conquered." This group has very little to do with what you mean when you say "Jewish people." It did include the kingdoms of Israel and Judah, which is where those names ultimately come from, though.
Then the Neo-Assyrians conquered or destroyed the kingdoms (including Jerusalem) making up that Israelite polity. Then the Neo-Assyrians collapsed and the Egyptians and Neo-Babylonians went a-conquering, with the Babylonians winning out. The Israelite people get royally fucked in this period. Their god stops being the old kinda god it had been with the polytheistic elements like being an actor in the world and the fore-bearer of his people. The exile happens, which was less dramatic than it sounds. Babylon plundered the shit outa what was left of the old kingdoms and the "Jewish" people dispersed.
Then the Persians conquered Babylon and Yehud (that area of Babylon where the Jews lived) gets some stability back and the people living there are introduced to codified laws, so they start writing their own. This is around 450bce, and is when the religion that'd become the Abrahamic faith starts to appear (nope: That first temple period? Had fuck-all to do with what anyone in the world means when they talk about a Jewish religion).

And that's who you mean when you talk about Jews: the religion that exists because of the Arab empire. Before that, there hadn't been a codified religion that any Jew of today would recognize.

Then some serious backwards, hardcore conservatives in Spain threw out the Moors and said "hey you're not Christians either!" to the Jews, which is when modern, Jewish persecution from Europeans really got going.

There are incredibly few texts we cannot translate. Even Linear B is only hard to translate because we only have 2 examples of it.
Lots of ancient writing survived, and the vast majority of it has been translated. The early Jewish writings mostly didn't survive, because they weren't very literate.
