Bach for sheer skill. His work essentially topped off all music, and no one has actually approached his technical mastery since. Basically everyone gave up.
Handel is amazing for his oratorios.
Haydn is a bit of a mix, and influenced so many.
Personally I go a bit older, early polyphony aka Orlando de Lassus and Palestrina.
