Not really that effective. 40mm of penetration (reliably with tungsten) at short range and a dead on shot could penetrate most early war tanks from the side. Mid war tanks pretty much ruled it out for anything serious other than tracks/viewports. Also the rounds had the tendency to shatter meaning you'd have to be johnny on the spot putting multiple rounds in the same area hoping one managed to make it through.

Germans already occupied Eastern europe back in WW1 but they were way saner back then and nobody was really complaining, there was no anti german resistance I heard about and we even got our own puppet state with a Polnische Wehrmacht, so no they didnt "have to" do it.

StG-44s were unironically terrible weapons. Unreliable, difficult to produce, too expensive, and didn't make a large enough impact on the battlefield to justify said expense.
This issue wasn't exclusive to the Germans either. The AK-47 was initially rejected for the same reasons, until Kalashnikov went back and eliminated the worst flaws with the AKM.
