Imagine reaching for an emergency stop button on a touchscreen with a hand soaked with blood and it not responding right.

Also you have to imagine it would be difficult to use a touchscreen in a vehicle which rocks and sways constantly, especially in stormy weather or in a battle.

This isn't the first time that that Navy had to take away more advanced tech and go back to simplier things. An example would be sound-powered phones, which are actually 1940's tech. It's pretty much powered by the sound of the user's voice so they work if the power in the ship goes down. They are used to communicate between various spaces on the ship. The Navy got away with them on a few newer ships, and were shocked when the new advanced systems went down during major fires. The outfitted the ships with sound powered phones again because they are reliable during an emergency.

While in the Navy every time someone would get pissed they would throw whatever they're holding against the wall or straight at the floor; this is most likely the reason why.

Touch screens and minimalist digital UIs are objectively hot garbage, and always have been. This is the technological equivalent of 21st century post-modern architecture. Dedicated physical controls are superior for multitasking and executing commands without looking down and doing things when your hands are wet or dirty.

There are ways to shield electronics from EMP (think of a massive faraday cage). It is insanely expensive, but it is used where a failure can NOT happen. Contrasting to most movies, an EMP will in most cases fuck your ram up. If you are close enough it could fry it - but most will not.
