So I’m from the PNW on a biz trip to Birmingham, and I take the clients out for dinner and a bender last night. We end up at a Waffle House to soak up the booze and as we leave I’m paying the bill and toss 20% tip in cash on the table (like I always do), and they look at me and get all defensive and say “oh no we don’t do that here” and then get into a whole argument like “ well, maybe just the loose change” blah blah. Now, keep in mind this is after they were tossing bills like water at strippers just a couple of hours before. Unlike the whores, the waitress at WH actually was working hard, and provided a useful service.

I thought waitresses got the full, non-tipped min wage at Waffle House, it's not really a conventional server job. But even if they don't, the employer is still required by federal labor law to make up the difference and bring them up to the $7.25/hr minimum wage if they don't get enough in tips to reach it.

So I went into the supermarket. I had to tip the security guard by the door, it's good that way you get security. Then I went to a member of staff and asked where an item was, obviously, I gave them a tip, then they showed me the item, then they handed it to me, so I could put it in the trolley, obviously they had to be given a tip for handing it to me, then I walked around the store buying more things A guy was putting items on the shelf, I needed one of those items, so I gave him a tip because he worked really hard to bring me what I needed, then I went to the checkout, but then I thought, I'll use the self checkout, because that's quick, there was an attendant at the self checkout, obviously I gave her a tip because of her hard work, then I scanned my items and pressed to pay, obviously I was under the helpful assistance of the self chekout attendant, so I gave her another tip for her continued service, the self checkout machine gave me price and it already included the tip so that the company that leases the self checkout machines can get their fair share, so then I went out of the store and got on a bus, I bought a bus ticket, and gave the driver a tip, he drives that bus really well and when I got to my destination I gave the driver another tip because I arrived alive because the great journey experience he provided for me. Then I walk to my house proud in the knowledge that I'm supporting local people in their daily endeavours.

Including the tip in the bill defeats the purpose of the tip, the purpose is to have an incentive to give good service; give good service get a tip, give bad service get no tip, when everybody gets the same there's no incentive to give good service. I think I read the reason they have it is because the managers of restaurants want it as a way to keep the staff in line, there's no way they can keep an eye on everybody and whip them or whatnot when they're not doing what they're supposed to do.
