They think that categories are constructs made by humans which are influenced by their environment. Within these categories are characteristics that were arbitrarily put there by society because it was useful or necessary at the time. They think that no characteristic is essential, but you need a sufficient (as determined by society) number of characteristics in a sufficient intensity to be counted in that category. This is why they think that you don't need to have a pussy to be a girl; if the human has all of the other characteristics of a girl, they would count as one.
For them sex is first defined by essential characteristics.
Sex: You MUST have trait x.
Gender: You CAN have trait x, but having traits y and z are good enough.

Pretty much, they think that secondary traits are as important as primary traits for identifying gender. If a male was male his entire life but then lost his dick he would still be male. To zoomers this means that the dick is not an essential element of being male because if it was lost, the guy would stop being male. They also apply this reasoning to the y chromosome, if someone was male in every way, except that they had 2 x chromosomes they would still be male; to zoomers this means that chromosomes are not essential to gender identification.

You can't. This destroys the traditional concepts of male and female because anyone born to a gender can work to have a sufficient amount of gender identifying traits (which is determined by society) to change their gender. SJWs can go further and reject the concept of "passing" because they considered it transphobic. If this happens then men would not even have to put in any effort to be considered female. Because when you let your children be raised by the state and mass media, the state and mass media teaches your children all kinds of crazy shit. Effectively the concept of gender as some kind of social construct is the ultimate expression of individualism, a disease engineered to undermine society from the inside. By teaching people that it is normal and reasonable for them to come up with their own unique pronouns, and then by codifying the implementation of forcing others to acknowledge those titles as valid into law, you are effectively giving a disruptive fringe part of society defacto control over the majority with no oversight. When someone makes you address them by their pronoun, gender or whatever they are basically stating "I am better than you, you must submit to my rule, address me by my honorific because that is the rule." It's hard for older people to understand. They know that this shit is bullshit and wrong. But adults are not the real target for it. The target is children. The adults would know someone don't deserve that honorific, but the children dont and become confused. Some even start to believe it. Whats worse, some children opt to adopt this strategy for themselves which gives it more validity in the minds of their peers. Do this long enough and all of a sudden random retards are going to be able to seize political and economic power because everyone else has been treating them like they are important and powerful and will subconsciously assume that these crazy maniacs really are important, and powerful, and must be obeyed. It's essentially a basic corruption of language which leads to a basic corruption of thought, which leads to corrupted behaviors that inevitably lead to people losing their minds and going crazy.

Gender is both the grammatical cathegory as you say and, in anthropology, the behaviours one culture expect from its men/women. Like "the women raise the child" or "the men ask the women family permission to marriage" are gender defined behaviours. Still it doesn't have nothing to do with what you desire or with severe psychosis like wanting to self mutilate.
It's post-modernist (((phylosophy))) applied to the anthropological cathegory of gender that created the current mess.

the concept of gender has always existed for as long as the written word has. It's a linguistic construct to aid in the conjugation of words, and this is valid concept in many languages, especially western languages. For example, Cow and bull are words that describe female and male cattle in english. What the marxists did in the 1950s/1960s was take this concept and pretend it also applied to physical objects not on the written page and then they strawmanned their own argument and said it was basically bullshit (ie a social construct). Their logic being, female cattle are only called cows because we say they are, but maybe they really are male cattle and we've been wrong this whole time. A lot of drug-fueled nonsense like this came about in this time period. In order to undermine western civilization, every facet of it had to be attacked, including language. There is nothing wrong in discussing, academically, how different cultures in different time and space dealed with the male/female biological drive, encoding different behaviours for those roles. This is what "gender theory" used to be about.
"Why the motherhood is socialized in tribe X, therefore "duty" of any adult female towards any baby, and is instead extremely individualized in culture Y, so that childless women never engage in the maternal role?" or "How is it that playing with kids is part of being a men in place X and it's considered a feminin behaviour in place Y?" used to be the questions.
