The rockets they are intercepting , as I understand, are largely 'home made' rockets and don't come down at relatively high speed. Thus they are relatively easy to shoot down.

Also the Iron Dome system uses a series of connected radars to determine where the incoming rockets are headed, and selectively chooses which ones to shoot down based on where the system calculates where the rockets are headed.
