I kind of want to do it with the simpit setup I'm working on, but I'm using a real F-4 Phantom ejection seat so it feels kinda wrong.

That UFC is old school though, updated from that, and nobody runs an air to ground radar on the right side, almost always have the RWR there. Generally under 5k AGL the WSO is the radar guy and pilot will be watching TF like in pic related, but we also don't do low altitude much anymore other than for fun practice.

This is second hand info from a buddy I have in pilot school, but he said that there's only a dozen or so buttons that you use on a regular basis. The rest are more situational, and even then it's grouped based on function, so if you understand what all the control panels are for, it's not too complicated to figure it out. It looks complicated to you because (I'm assuming) you're not a pilot, so you have no context as to why there'd be so many different controls.

It takes 3 different movements to turn a C-172's engine on and off, all requiring different buttons and levers, and thats just a trainer. Imagine something with 3 more engines and a million different functions. Often times you will have multiples of switches and/or levers for each engine.

shit adds up fast.

This is correct. In the new P-8 you need to hit about five switches/toggles to turn on the engines, I'd have to check my NATOPS though.
Each switch does SPECIFIC stuff, like controlling fuel flow to the engines and APU, or the electrical busses or the compressed air systems, or the hydraulic systems. It's all compartmentalized though. If I wanna do radio stuff I do it on the radio panel.

Master On-> inverters on-> FADEC switches on -> Prime pumps on-> Start switch to idle-> monitor start for over temp -> check amp draw -> number 2 engine start switch to idle

There's no shitter in it, just a special cannister. This and side-by-side cockpit where you can actually stand is infinitely more crew comfort than American pilots could ever hope to enjoy in their F-15E. I still remember reading memories of some poor yankee suffering flying sorties to Iraq, though by now I'm not sure whether it was like 3-4 hours in F-15E or 13-14 hours in B-2.

Well, on most larger aircraft you have engine monitoring equipment, fuel system controls/gauges, hydraulic system/gauges, electrical system/controls, air data computers (pitot static information), attitude/heading reference systems (gyro instruments), radios and transponder, flight control system, and if its a combat aircraft you have weapon and guidance systems. Most of these systems operate automatically, but in the event of a mechanical failure or abnormality (which, due to their complexity, isn't too uncommon) the pilot needs to be able to control the system and manage the situation. Gauges are used to determine system operating parameters, and switches are for turning things on, off, or isolating parts of various systems.

There's a lot more to it than an on/off button.

Pic related is a picture of the T-6B, the trainer aircraft from US navy/air force.

Starting at the top left, 4 of those switches are for lights, 2 have to do with keeping the aircraft trimmed. We use those 6 every single flight. Then you got your PCL and flaps. The next clump of switches are for testing shit (lights, fire detection system, etc). We use those switches before starting the engine, then dont touch them.

Starting at the top right, you got your bat, gen, aux bat, starter switch, ignition, switches that have to do w/ fuel and balancing, then switches for ECS.

To answer your question, yes, every switch in the cockpit is necessary, and utilized for pretty much every single flight.
