There is a simple answer here. If a three hole balaclava shifts around at all while you're operating your vision could get obscured, forcing you to reach up and readjust it in a high risk moment. This is much less of a issue with a single, large hole. To illustrate this point, look at the eye space that these () guys have versus these () ones.

"Mail" is a type of composite armor system comprised of at least two parts: thick layered or padded textile, and a layer of metallic ring lattice over it.

This isn't mail, it's only the exterior half of it.
But it's way too small to accomodate a padded arming cap underneath.

Armor-grade padding for mail needs to be the equivalent of about 20 to 30 layers of linen fabric. It's pretty darn thick.

Bulletproof kevlar does function as padding against getting stabbed or cut.

Also, it's possible to stab you with a shiv even if you wear rings. The rings make you pretty much impervious to cuts (except for the blunt trauma part), but it's the padding that determines its effectiveness against stabbing with pointy objects. If you don't have enough padding, the mail won't help much, the rings will just make it as though the thing stabbing you is a bit less pointy, and you'll be stabbed by your rings ripping through your skin instead. Granted, it's better than nothing, but it ain't optimal.

The nuance is is that a lot of the archeological finds didn't have any padding with them because organic materials decompose.

The padding was mostly to prevent penetration. Trauma from blunt-force weapons cannot be mitigated enough to prevent broken bones, even with the amount of padding that was worn in medieval times.
