Because they haven't truly been "done right" yet (IE: the varied solutions for their various drawbacks have yet to be rolled into a single weapon), their touted benefits are of questionable actual value (If the additional few hundred fps velocity at long range is of crucial importance to you, you are frankly using the wrong caliber to begin with); but most importantly bullpupfags are the most precious sensitive little bitches that always bite.

I have, and ive also shot ARs. While the AR platform is nice, I prefer the SA80. Less felt recoil due to weight, nicer to carry due to weight being more to the rear, shorter, and all drills can be done with just your left hand.
ARs also get front heavy once you put a few bits of kit on the rails and you end up with magwell grip (or at least I do), whereas gripping in the same location on an SA80 is comfortably infront of the trigger except with less weight in front therefore feels more stable.
In terms of ergos, the average person would probably find it more intuitive to work an AR, but for a soldier its all about practice. Drills on the AR and SA80 take the same amount of time if youre equally practiced on both, reloads are so close in time as to make no applicable difference, unless youre doing some ninja emergency reload SF shit which no average squaddie does.
If you got a US infanteer with an AR versus a british infanteer with an AR, obviously the US lad is gunna be quicker and better with it, and vice versa if it was an SA80.
TL;DR it comes down to training and practice but I personally prefer bullpups (or at least the L85A2) for reasons listed above.

For these disadvantages you gain a slightly shorter rifle, oooh, aaaah...
In terms of a service rifle, it largely makes no difference whatsoever.
In terms of a civilian ownable rifle, its completely down to preference, especially seeing as different people like different setups for their firearms.
