I don't think you're intentionally trying to deceive anyone. The thing I've always hated about "special forces" militaria is that it's primarily hearsay, especially modern stuff where private companies (some of whom don't even exist anymore) are involved.
For modern stuff I'm hesitant to trust even photographs unless they come from a press or other reputable source because I'm starting to see airshitter and reenactor photos of the early 2000's period being passed off as the real thing, hopefully unintentionally.

The biggest problem is the NVA suspenders that serve as the backpack straps. The bottom parts of the strap simply hook to two D-rings and keep coming off unles you fix them with something. The rest of the Y-strap is useless when not worn as intended and just dangles around. I secured the straps to the pack with some wire and cut off the useless parts of the webbing and it's great now.
The straps are not padded, which might affect your comfiness, and it takes a while to open/close. I don't really mind, I like the spartan design and even got compliments from friends, as it looks pretty stylish. I also got caught in heavy rain with it multiple times and it turns out that it's completely waterproof. Also dirt cheap. I reccommend it.

Did the US ever produce M81 bomber jackets? All I find find of American origin is olive green and black. Are there any jackets out there from any countries or manufacturers that meet my specifications?
You'll probably have to settle for some newer "mil-spec style" stuff. Military issue camouflage flight jackets are rare.
I've never seen photos of US pilots wearing M81 jackets, although it's possible at some point, probably in the early 80's they experimented or trialed camouflage flight suits and jackets.
For the most part across the world, flight jackets are solid color and occasionally reversible to something like blue or international orange.
If you don't care for brand name quality and overprice like Alpha and are expecting to give it some general wear and tear out I'd just grab some generic mil-spec thing:

Beware the MA-1 was in fashion, and I guess still kinda is, from a few years ago, and prices are still reflecting that somewhat.
Also beware urban camouflaged MA-1's are basically standard issue for skinheads, especially worn with combat boots and skinny/black/stonewashed jeans, so avoid those if you don't want to be associated with that scene.
Since when are urban camo MA-1s skinhead? Where I'm at the skins (Golden State Skinheads and Hammerskins, mostly) typically wear black hoodies, white or black t-shirts (sometimes with RAC band logos on them), and jeans (black, grey, or blue, in various cuts) with either Docs (black with red laces) or Adidas. Only skin I've ever seen wearing a flight jacket was wearing a black MA-1, and that was ten years ago in Hamburg. Only skin I've ever seen wearing urban camo was wearing camo cargo shorts and a black t-shirt with a viking on it.
In the US they aren't as common as they used to be, but in the UK and Eastern Europe they're more popular.
Nowadays the black MA-1 with urban camo BDU pants is the go-to but without patches and pins the jacket is common in normal fashion, and you weren't looking for a solid color one anyway.
