Why are humans the "average" race when in comparison to the differences between most races in fantasy...

Yes, but do you really expect a Ork to be accurate? A ork may make large weapons man portable, but it will be overall less accurate than a human with a less powerful weapon.

It seems to often be the choice of the authors of these stories. this could be because they want to make the fantasy race more distinctive. Stand out a bit more for story's sake. It is a fantasy story after all.

Most settings need a baseline character, those easy jack of all trades characters with basic stats that are just easy to relate to/pick up and play for new players.
Since humans are the most familiar race, it stands to reason humans become this baseline race.

What if
Humanity finally goes full y into space, colonize colonies, begin industry in pace and make war in space. Then finally, we encounter and meet other space faring beings. Only to discover we are the most militaristic species in the milky way and our war technology are pretty much second to none?

Because we base other races on how they compare to man since we dont really have any other sentient races in real life to compare to. Honestly, I've been writing a story with a somewhat similar premise of humanity vs. fantasy.
