I'm looking at entry-level ARs but first I wanted some clarification on what all can be tossed on to your standard AR lower. Is it just as simple as the 2 retention pins and slap a new upper on?

Quite literally yes. You get into goofy things with different buffer weights and spring strengths that vary can vary with gas systems, ammo type, caliber (switching between a 5.56 and .300 Cosby upper, etc) and suppressor use. But that's pro level shit and doesn't need to be worried about

No, those are AR-10 lowers. They're longer and have longer mag wells. You can't interchange those receivers between the regular size (5.56/.300/7.62x39) and large (.308, etc)
Most regular size lowers will mate to most regular size uppers. For aesthetic reasons, it's best to match brands but it's not necessary for functionality. You can put an LMT, BCM, Radian, etc high end upper on an Anderson lower. SHOULDN'T but it will function.
