I have a question: Will an aftermarket stock for a 12 gauge Mossberg 500 fit on a 20 gauge version? If not, is there an adapter for it?

It should. I've fitted a pistol grip on a 500C (20 gauge model) advertised for a regular 500. It was a factory aftermarket part too. Also did a picatinny top.

I put a few dozen slugs (though some of them were minis) through my Mossberg 590a1 this afternoon. Had been forever since I shot that thing so was a lot of fun. Was my first time playing with the minishells though & I don't have the adapter to make them feed easily. But still fun times.

I bought a Maverick 88 and added a fiberoptic sight an ammo carrier to the buttstock and a flasghlight to the barrel. Any other common mods I can do? The shotgun already came with a folding stock and pistol grip.

No it won’t. The 590 uses a different mag tube design that has a removable spring retainer rather than the 500’s closed tube. There’s no way to put a mag tube extension on a 500. Sorry.

Bonus for you. I've seen a couple slaughtered Mossberg 500s in the hands of novice gunsmiths. An armorer that I use for sights, headspacing, and difficult fixes has a great story of someone who tried to saw off the forend of a Mav 88, and was surprised that the fix cost more than a new shotty.

Yeah, I do. That's my Mav in - the buffer tube is indeed solid plastic, but I've put a bunch of rounds through the gun with that stick on and it never felt like it was going to come apart. Admittedly, I haven't out any 3" magnums or anything through it, but it's seemed solid so far.

It doesn't bother me much that it's plastic I guess, but I heard you need to take the entire stock off to disassemble. Not that I would be disassembling it a lot, but that makes the sga a bit better of an option in my opinion, for my uses. If I hate it then I guess I can sell it.

You have to take the stock off to disassemble the 500 with basically any pistol grip, because where a pistol grip has to go blocks the trigger group from lifting out. The good news is that the T3 stock is *very* easy to take off.

Go to a gun shop and handle a shotgun with the SGA on it. I’ve never been to an LGS that didn’t have one. See if you like the feel. But make sure to do it on a Mossberg - Remingtons have a trigger that’s further back on the gun, so the SGA has a very different feel on them.
I can tell you that the T3 is *very* comfy for me. But your mileage may vary.

Like I said, personally I went with the T3 over the SGA, mostly because I have short fingers and reaching the Mossberg trigger from the grip of the SGA is a stretch (literally!) for me. But your hand is different from mine, so what’s comfortable for you might not be comfortable for me.
