aerial ramming is actually very difficult, requiring a well trained pilot and balls of steel
doing so in a acid powered rocket with wings that barely works would require an even more incredibly skilled and experienced pilot

given how short in supply skilled pilots were, this is not the most effective method unless the pilot could survive the ramming reliably

In fairness the redesigned engine increased on-fuel time to 12 minutes, and another redesign (slated for the second generation) would have increased it to around 15. Given that it only took 2 minutes to reach the combat zone, it would have left the pilot ample time to gun down a couple bombers and run away.

Provided he faces absolutely no resistance the whole time. Send a couple pilots to counter him and he'll either turn around or be kept in the air too long.

Pilot were under orders not to attempt any sort of dogfight. They were quite strictly instructed to just barrel through any sort of defensive fire (be it from the bomber, or escort planes), shoot, then fuck off (maaaybe attempt a turn-around and try for another go at a bomber, if they had the later twin-chamber engine with increased on-fuel time).
Though, according to Eric Brown (who flew the thing both powered and unpowered), the hull itself had more than adequate flight characteristics, so the interdiction on dogfighting was due to lack of endurance, rather than any aerodynamic failings.

To put some perspective on the "reliably" part, a manned version of the V1 missile was developed (with Hanna Reisch being called in to test fly it and figure out why all the other test pilots crashed fatally as they tried to land it, her proven ability to survive the Komet being a large part of why she got that job) with the plan being for the pilot to bail out just before impact. I suspect this was for use against ground targets, so estimating when exactly you are just before impact may be rather easier than against a bomber. Even so the estimates were that less than 1% would manage to get out safely.
